Ingredient Spotlight: Apple Cider Vinegar

This powerhouse of an ingredient is featured in every single one of our dressings. Yes, you read that right! Every. Single. Dressing. So, let’s dive deeper and talk about why we love unfiltered apple cider vinegar - or as we call it, ACV - so much! 

Unbelievably Unfiltered 

The ACV we use in our dressings is organic, unfiltered, and unpasteurized– it hasn’t been treated with heat, nor is it refined.

Apples are crushed to squeeze out the juice, and the liquid is fermented in two steps: first, yeast is added to convert the sugars into alcohol; second, bacteria– not the icky bacteria, but the good kind– is added to ferment the alcohol into acetic acid. This acetic acid gives ACV it’s “vinegary” and “sour” taste, while also imparts some health benefits. 

Why it’s a VineGREAT Ingredient 

Apple cider vinegar has garnered a lot of attention over the last few years. Perhaps the most notable benefit of them all is its link to blood sugar management, especially in people with Type 2 Diabetes. Some studies have shown that when consumed with high-carb meals, ACV can reduce blood sugar and improve insulin sensitivity. If that isn’t enough, ACV is also linked to increased feelings of fullness, which could lead to a decrease in appetite and intake throughout the day.

In addition to these wonderful advantages, ACV also has great antibacterial properties. The harmful bacteria we want to avoid, such as E. coli, staphylococci, and salmonella, cannot survive in ACV’s acidic environment, thus making ACV a fantastic natural preservative. 

Salad Dressings + ACV = Perfection 

Mother Raw dressings are proudly cold-blended and minimally processed, so we need a different means of ensuring they stay fresh and safe. We would NEVER consider adding artificial preservatives or fillers, so that’s where ACV comes in! 

Apple cider vinegar has a high acidity due to the acetic acid created through fermentation. This helps prevent mold from growing and spoiling our dressings. It is this acidity, combined with keeping our dressings cool in the fridge, that prolongs the shelf-life of our products without any added chemicals!
